My Story

I used to experience headaches on a daily basis and acne like no other. Let me tell you, having breakouts constantly made me feel insecurities to the max! Not only that, it lowered my self-esteem & my self-confidence! I was never big into trying skin care products.

About my headaches, I used to wake up with it daily. It would hinder my focus & day to day activities. These headaches would linger throughout the day. I never believed in taking a "pill". I didn't want to rely on a pill knowing it's only a "temporary fix". When I was in Chiropractic school, I started to learn more about nutrition. I started applying it to my own life and began changing my eating habits & lifestyle. I would make dishes from what I learned, substituting what I loved with healthy ingredients (by eliminating processed foods, sugar, gluten, etc) and began creating new clean and healthy recipes by focusing more on wholesome organic ingredients, herbs & spices. I began practicing healthy habits by eating clean foods, exercising, resting, self care ultimately creating a balance with mind, body and soul.

By changing my eating habits, I no longer suffer from headaches nor acne. Paying attention to what I was eating, made all the difference. The results clear mind, glowing skin, more energy, increase in self confidence, feeling happy & vibrant.

Let's Get To Know Each Other!

Hi! I'm Kajal Patel! I was born in Toronto, Canada and have lived in many places within the United States and abroad. I spent time in Johannesburg, South Africa and at the age of ten, relocated to Mumbai, India for eight years. While there I had to learn to speak, read, and write in both Hindi and Marathi which was challenging as I had formally only spoken English and my mother tongue, Gujarati. 

While in India, I embraced the culture of the region, even learning authentic Indian cuisine and traditional dance as part of my assimilation into the culture. I spent many hours under the tutelage of my mother learning how to prepare authentic Gujarati cuisine which has its own blend of unique spices and preparation techniques.  While I admit that I loathed being in the kitchen for so many hours, that experience enabled me to hone my skills in being able to conceptualize and create the unique flavorful dishes I now prepare.

I attended an all-girls college which was challenging as all testing was conducted in the format of essay and oral examination.  Of note, I credit my focus and discipline to the strict standards that were imposed there. 

At the age of eighteen, I returned to the States and attended the University of Florida before enrolling at the Palmer College of Chiropractic in Davenport, IA. It was during those years at Chiropractic College that I learned of the innate healing capacity of the body. I also realized the healing potential of combining nutritional foods with natural holistic techniques. It is an interest that has carried over to my daily life as I have cultivated methods of food preparation that embrace the use of traditional spices & medicinal herbs within authentic native and spontaneously imagined dishes. 

I earned my Doctor of Chiropractic degree in 2010. During my training, I felt compelled to return to India on a mission trip to serve the impoverished indigent population of Hyderabad where there is limited access to medicine and none to holistic care.  This was a life changing event for me as I witnessed miraculous transformations in people who had never experienced the healing potential of simple small changes in nutrition, exercise & just simple lifestyle changes. I also was able to see and treat those with conditions hardly ever seen within most developed countries. I recall tears, hugs, laughter, blessings and great joy during that trip.

I have always believed that health comes from the inside out and it is very important to take care of our one and only one body with proper nutrition, education & exercise. I have shared some of my stories & struggles I had health wise above & I am on a mission to share my food creations and outline the variety of healing ingredients I employ in hopes to help you live at your best! I truly embrace the doctrine of food as medicine, particularly, to borrow from Hippocrates - let food be thy medicine and medicine be thy food.

I have a passion for health and healing and hope to enhance the life, health and wellbeing of all who join me in this community here inside Twisty Simple Eats!

Twisty Simple Eats "Delivered". Very happy to be a member!

As a family we have tried to make a conscientious decision to eat healthy whenever possible. Working with time limitations we tried incorporating pre-prepared meals from named and local establishments but would always eventually turn old for one reason and another. I made attempts at Sunday meal preparations for the week but that would peter out.  I came across the "TSE" website and was intrigued mainly because I needed something new and refreshing. Here is what I want to share about my experience. Over the past few months I have made a handful of awesome meals, each which have taken roughly 45 minutes between preparation to dish. I can't speak enough of how much I enjoy the simplicity and ease in following each recipe. Step by step food preparation with video and written instruction. I would like to add that the meals have been  tasty and delicious with plentiful size servings (bonus when there is enough for leftovers). My food creations not only look great with colorful fixings but have been a big hit with family and friends. My friends are hard pressed to believe I cooked these meals. Have to admit I do enjoy the compliments. One more thing worth noting, Navigation of the web forum is very intuitive. The monthly recipes are categorized in one section, there is also a community share section with pics and comments, and a general section with cooking and health motivations. The "TSE" food forum is exactly the answer for what I was looking for and will sum it up by saying it's become my healthy meal culinary partner.

Twisty Simple Eats (TSE) has changed my life for the better!

Before joining this community, I had no idea that whole healthy foods could taste so good! TSE has taught me how to incorporate fresh herbs and spices into whole foods. I am grateful for TSE's guidance. It's nice to be able to interact with other members of this community and this helps me to stay on track! The Simplicity of Twisty Simple Eats!

As I’ve gotten older, I’ve found that it gets harder to eat and stay healthy. There are so many bad food choices out there that actually taste good, so, naturally it’s easy to make the wrong choices. I do the cooking in my family and although I try to cook healthy, getting the family on board with dishes that is boring and usually lack flavor is hard to do consistently. The recipes that I find online for ‘clean eating’ are intriguing but by the time you gather up all the ingredients, the time and expense pretty makes it not worth the trouble. This is why I like the simplicity of Twisty Simple Eats. All the ingredients are stuff we eat anyway, I usually have the herbs and spices in the cabinets, doesn’t take a ton of time and are delicious to boot.  It’s great to be able to go to one place like TSE and find recipes that are clean, healthy and flavorful. I definitely recommend Twisty Simple Eats!
